- 2 cups cooked macaroni
- 1 cup shredded cheddar cheese
- 1/2 cup pureed cauliflower
- 1/2 cup pureed carrots
- 1/4 cup breadcrumbs
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Mix macaroni, cheese, cauliflower, carrots, breadcrumbs, egg, salt, and pepper in a bowl.
- Scoop mixture into greased mini muffin tins.
- Bake for 15-20 minutes until golden.
- Let cool slightly before serving.
Notes
- You can use any vegetable puree.
- Store leftovers in an airtight container for up to 3 days.
