Ingredients

  • 1 cup heavy cream
  • 5 tablespoons unsalted butter
  • 1 1/2 cups granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line an 8-inch square pan with parchment paper.
  2. Combine cream and butter in a saucepan. Heat until butter melts. Set aside.
  3. In another saucepan, mix sugar, corn syrup, and water. Cook over medium heat until sugar dissolves.
  4. Increase heat to medium-high. Boil until mixture turns golden brown.
  5. Slowly add cream mixture. Stir constantly.
  6. Cook until temperature reaches 245°F on a candy thermometer.
  7. Remove from heat. Stir in vanilla and salt.
  8. Pour into prepared pan. Let cool completely.
  9. Cut into squares and wrap in parchment paper.
