Description

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and water. Add salt, pepper, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add shredded chicken and noodles. Cook for 8 minutes until noodles are tender.
  7. Stir in fresh parsley before serving.
