A simple and comforting homemade chicken noodle soup with tender chicken, vegetables, and noodles in a flavorful broth.
Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 cups water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and water. Add salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add shredded chicken and noodles. Cook for 8 minutes until noodles are tender.
- Stir in fresh parsley before serving.
Notes
- Use leftover rotisserie chicken for quick prep.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for longer storage.
