Ingredients

  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and carrot. Cook until softened.
  3. Stir in black beans, kidney beans, diced tomatoes, and vegetable broth.
  4. Add chili powder, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
