Ingredients

  • 4 boneless, skinless chicken breasts (or 1 block firm tofu, pressed and sliced)
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 clove garlic, minced
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix honey, mustards, garlic, paprika, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear chicken (or tofu) for 2-3 minutes per side until lightly browned.
  5. Brush honey mustard mixture over the chicken (or tofu).
  6. Transfer skillet to oven and bake for 15-20 minutes until cooked through.
  7. Let rest for 5 minutes before serving.

Notes

  • For crispier texture, broil for the last 2 minutes.
  • Marinate chicken in the sauce for 30 minutes for extra flavor.
  • Use maple syrup instead of honey for a vegan version.
