- 4 large orange bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cumin
- 1 cup shredded cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off peppers and remove seeds.
- Carve jack-o’-lantern faces on one side of each pepper.
- Heat oil in a skillet, cook beef until browned.
- Add onion and garlic, cook until soft.
- Stir in rice, tomatoes, and spices.
- Fill peppers with meat mixture.
- Place in baking dish, cover with foil.
- Bake for 30 minutes.
- Remove foil, sprinkle cheese, bake 10 more minutes.
Notes
- Use a small knife for easy carving
- Substitute ground turkey for beef if preferred
- Add hot sauce for spicier flavor
- Let cool 5 minutes before serving
