- 2 cups grated sweet potatoes
- 1 cup coconut milk
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, mix grated sweet potatoes, coconut milk, brown sugar, melted butter, and vanilla extract.
- Add cinnamon, nutmeg, ginger, and salt. Stir well.
- Pour mixture into the greased baking dish.
- Bake for 45-50 minutes until set and golden brown.
- Let cool before slicing. Serve warm or at room temperature.
Notes
- Use freshly grated sweet potatoes for best texture.
- Adjust sugar to taste if preferred.
- Can be stored in the fridge for up to 3 days.
