A healthy and refreshing salad inspired by Jennifer Aniston, featuring quinoa and chickpeas as the main ingredients.
Ingredients

- 1 cup cooked quinoa
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let it cool.
- In a large bowl, combine quinoa, chickpeas, cucumber, red onion, parsley, and mint.
- Drizzle olive oil and lemon juice over the salad.
- Toss gently until well combined.
- Season with salt and pepper to taste.
- Serve chilled.
Notes
- You can add feta cheese for extra flavor.
- Store leftovers in an airtight container in the fridge for up to 2 days.
- For a vegan version, omit feta cheese.
