Description

Quick and easy muffins made in a blender with spinach and banana for a kid-friendly, nutritious snack.


Ingredients

  • 1 cup spinach (packed)
  • 2 ripe bananas
  • 1 egg
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Blend spinach, bananas, egg, honey, milk, and vanilla until smooth.
  3. Add flour, baking powder, baking soda, cinnamon, and salt to the blender. Pulse until just combined.
  4. Pour batter into muffin cups, filling each about 3/4 full.
  5. Bake for 15-18 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before transferring to a wire rack.
