Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix mashed sweet potato, almond butter, and honey until smooth.
- Add rolled oats, cinnamon, and vanilla extract. Stir well.
- Fold in raisins and chopped nuts if using.
- Drop spoonfuls of dough onto the baking sheet and flatten slightly.
- Bake for 12-15 minutes or until edges are golden.
- Let cool before serving.
