Description

A simple and flavorful dish featuring tender chicken and fresh vegetables marinated in a lemon herb mixture, grilled to perfection.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, mix olive oil, lemon juice, oregano, thyme, garlic powder, salt, and black pepper.
  2. Add chicken cubes to the marinade and coat well. Refrigerate for 30 minutes.
  3. Thread marinated chicken and vegetables alternately onto skewers.
  4. Preheat grill to medium-high heat.
  5. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
  6. Serve hot with a side of rice or salad.
