- 2 boneless, skinless chicken breasts, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- In a bowl, mix olive oil, lemon juice, oregano, thyme, garlic powder, salt, and black pepper.
- Add chicken cubes to the marinade and coat well. Refrigerate for 30 minutes.
- Thread marinated chicken and vegetables alternately onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Serve hot with a side of rice or salad.

- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
