- 1/2 cup plain yogurt
- 1/4 cup vegetable oil

- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup diced rhubarb
- 1 tbsp poppy seeds
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix yogurt, oil, egg, lemon zest, lemon juice, and vanilla.
- Combine wet and dry ingredients. Fold in rhubarb and poppy seeds.
- Pour batter into the loaf pan. Bake for 50-55 minutes or until a toothpick comes out clean.
- Let it cool before adding the glaze.

- Adjust sugar based on rhubarb tartness.
