Ingredients
4 boneless, skinless chicken breasts
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
2 tablespoons fresh thyme leaves
1 cup spinach leaves
1/2 cup feta cheese, crumbled
Salt and pepper to taste
2 tablespoons olive oil
Optional: 1/4 cup sun-dried tomatoes, chopped
Instructions
1. Lay each chicken breast flat on a cutting board and slice through the middle to create a pocket.
2. Sprinkle salt and pepper inside each chicken breast.
3. Layer spinach leaves, crumbled feta cheese, and fresh thyme inside the pocket.
4. Roll the chicken tightly and secure with toothpicks or kitchen twine.
5. Heat olive oil in a skillet over medium heat and cook the roulades until golden brown on all sides.
6. Transfer to a baking dish and bake in a preheated oven at 375°F (190°C) for 20-25 minutes.
7. Let the roulades rest before slicing and serve with a side of roasted vegetables or a fresh garden salad.
Notes
To make slicing easier, place the chicken in the freezer for about 15 minutes before cutting.
For an extra burst of flavor, deglaze the skillet with white wine or chicken broth before baking.
Garnish with fresh thyme leaves and a wedge of lemon before serving.
