Description

Ingredients

Scale
  • 5 lbs russet potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream
  • 1/4 cup cream cheese

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes.
  2. Drain potatoes and return to the pot.
  3. Heat cream and butter in a small saucepan until butter melts.
  4. Mash potatoes with a potato masher or ricer.
  5. Stir in warm cream mixture, sour cream, and cream cheese until smooth.
  6. Season with salt and pepper.
  7. Transfer to a greased baking dish, cover, and refrigerate for up to 2 days.
  8. Reheat in a 350°F oven for 30 minutes before serving.
