Description
A fresh and zesty Mexican quinoa salad with a tangy orange lime dressing. Perfect for a light meal or side dish.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 orange
- Juice of 1 lime
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. Cook with 2 cups water according to package instructions. Let cool.
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together orange juice, lime juice, olive oil, cumin, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 days.
Notes
- For extra flavor, add diced jalapeño.
- Replace quinoa with brown rice for variation.
- Store leftovers in an airtight container.
