Ingredients

- 1/2 cup cotija cheese (crumbled)

- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Salt to taste
Instructions
- Grill or roast the corn until slightly charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cayenne, and salt.
- Toss the corn with the dressing.
- Add crumbled cotija cheese and cilantro.
- Serve chilled or at room temperature.
