Description

Easy-to-make quesadillas packed with mild chicken and fresh veggies.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup shredded cheese
  • 4 flour tortillas
  • 1 tbsp olive oil
  • 1 tsp mild taco seasoning
  • Salt to taste

Instructions

  1. Cook chicken in olive oil until no longer pink, then shred.
  2. Sauté bell pepper and onion until soft.
  3. Mix chicken, veggies, and taco seasoning.
  4. Place mixture on half of each tortilla, top with cheese, and fold.
  5. Cook quesadillas in a pan until golden and cheese melts.
  6. Cut into wedges and serve.

  • Add jalapeños for extra heat.
