Easy-to-make quesadillas packed with mild chicken and fresh veggies.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 bell pepper, sliced
- 1 small onion, sliced
- 1 cup shredded cheese
- 4 flour tortillas
- 1 tbsp olive oil
- 1 tsp mild taco seasoning
- Salt to taste
Instructions
- Cook chicken in olive oil until no longer pink, then shred.
- Sauté bell pepper and onion until soft.
- Mix chicken, veggies, and taco seasoning.
- Place mixture on half of each tortilla, top with cheese, and fold.
- Cook quesadillas in a pan until golden and cheese melts.
- Cut into wedges and serve.
Notes
- Use any cheese you prefer.
- Add jalapeños for extra heat.
- Serve with sour cream or salsa.
