Description

Delicious mini chicken and veggie meatballs perfect for appetizers or meals.


Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground chicken, carrots, zucchini, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper.
  3. Shape mixture into small meatballs.
  4. Heat olive oil in a skillet over medium heat.
  5. Brown meatballs for 2-3 minutes on each side.
  6. Transfer to a baking sheet and bake for 10-12 minutes until fully cooked.
  7. Serve warm.
