Ingredients

- 1 lb ground chicken
- 1/2 cup grated carrots
- 1/2 cup grated zucchini
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground chicken, carrots, zucchini, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper.
- Shape mixture into small meatballs.
- Heat olive oil in a skillet over medium heat.
- Brown meatballs for 2-3 minutes on each side.
- Transfer to a baking sheet and bake for 10-12 minutes until fully cooked.
- Serve warm.

- Can be frozen for up to 3 months.
- Use parchment paper for easy cleanup.
