Description

This light and creamy no bake cheesecake salad is the perfect quick dessert for summer! Bursting with juicy strawberries, blueberries, and bananas folded into a sweet, fluffy cheesecake filling, it’s ready in just 15 minutes and requires no oven time. Great for potlucks, brunches, or a cool evening treat.

Ingredients

Scale
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (e.g., Cool Whip, thawed)
  • 2 cups fresh strawberries (hulled and quartered)
  • 1 cup fresh blueberries
  • 1 banana (sliced)

Instructions

  1. In a large bowl, beat the cream cheese with a hand mixer until smooth.
  2. Add powdered sugar and vanilla extract; beat until fully combined and fluffy.
  3. Gently fold in the whipped topping using a rubber spatula.
  4. Add strawberries, blueberries, and banana slices to the bowl. Carefully fold them into the mixture to avoid crushing the fruit.
  5. Chill the salad for at least 1 hour before serving to allow flavors to blend.
  6. Stir gently before serving and enjoy cold!

Notes

For best results, use room temperature cream cheese to prevent lumps.

Add the banana just before serving to prevent browning.

Customize with different fruits like raspberries, grapes, or pineapple.

Want more texture? Try folding in mini marshmallows or crushed graham crackers!

Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze.
