Ingredients

- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 cup coarse sugar for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Whisk flour, baking soda, salt, ginger, cinnamon, and cloves in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and molasses until combined.
- Gradually mix in the dry ingredients until well blended.
- Roll dough into 1-inch balls, then coat in coarse sugar.
- Place balls 2 inches apart on baking sheets and bake for 10-12 minutes.
- Cool on baking sheets for 5 minutes, then transfer to a wire rack.
Notes
- Use blackstrap molasses for a stronger flavor.
- Dough can be chilled for easier handling.
- Store in an airtight container for up to 5 days.
