Description

A hearty and flavorful stuffing combining mushrooms, kale, and walnuts for a nutritious side dish.


Ingredients

Scale
  • 2 cups chopped mushrooms
  • 2 cups chopped kale
  • 1 cup chopped walnuts
  • 3 cups cubed bread
  • 1 chopped onion
  • 2 cloves minced garlic
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onions and garlic, sauté until softened.
  4. Add mushrooms and cook until they release their moisture.
  5. Stir in kale, walnuts, thyme, and sage. Cook until kale is wilted.
  6. Combine the vegetable mixture with bread cubes in a large bowl.
  7. Pour in vegetable broth and mix until evenly moistened.
  8. Transfer the mixture to a baking dish and bake for 25-30 minutes until golden brown.
