A simple and delicious one-pot pasta dish with creamy tomato sauce and fresh spinach.
Ingredients

- 8 oz pasta
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add minced garlic and sauté for 1 minute.
- Pour in diced tomatoes, heavy cream, salt, black pepper, and red pepper flakes. Stir well.
- Add pasta and 3 cups of water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 12 minutes, stirring occasionally.
- Add spinach and stir until wilted.
- Sprinkle with Parmesan cheese before serving.
Notes
- Use any pasta shape you prefer.
- Add cooked chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 3 days.
