2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
2 cups fresh peaches, peeled and sliced
Optional: 1/4 teaspoon cinnamon for added flavor
Instructions

2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, until just combined.
6. Gently fold in the sliced peaches.
7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
For a dairy-free version, substitute the butter with coconut oil and use almond milk instead of buttermilk.
If fresh peaches aren’t available, canned or frozen peaches can be used, though fresh is always best for that vibrant flavor.
Consider adding a handful of chopped pecans or almonds to the batter for a nutty crunch.
