This Peach Caprese Salad with Balsamic Cherries is a delightful twist on the classic, combining sweet peaches, creamy mozzarella, and tangy balsamic cherries for a refreshing summer dish.

  • 3 ripe peaches (sliced)
  • 8 oz fresh mozzarella (sliced)
  • 1 cup fresh basil leaves
  • 1 cup cherries (pitted)
  • 1/2 cup balsamic vinegar
  • 2 tbsp olive oil
  • salt and pepper (to taste)

Instructions

  1. In a saucepan, combine cherries and balsamic vinegar. Simmer over medium heat until cherries soften and the vinegar reduces to a syrupy glaze, about 10 minutes. Set aside to cool.
  2. Slice peaches and mozzarella into even rounds. Arrange on a platter, alternating between peach and mozzarella slices.
  3. Scatter fresh basil leaves over the arranged peaches and mozzarella.
  4. Drizzle the balsamic cherry glaze over the salad. Finish with a sprinkle of salt and pepper, and a drizzle of olive oil.

Notes
