- 3 ripe peaches (sliced)
- 8 oz fresh mozzarella (sliced)
- 1 cup fresh basil leaves
- 1 cup cherries (pitted)
- 1/2 cup balsamic vinegar
- 2 tbsp olive oil
- salt and pepper (to taste)
Instructions
- In a saucepan, combine cherries and balsamic vinegar. Simmer over medium heat until cherries soften and the vinegar reduces to a syrupy glaze, about 10 minutes. Set aside to cool.
- Slice peaches and mozzarella into even rounds. Arrange on a platter, alternating between peach and mozzarella slices.
- Scatter fresh basil leaves over the arranged peaches and mozzarella.
- Drizzle the balsamic cherry glaze over the salad. Finish with a sprinkle of salt and pepper, and a drizzle of olive oil.
