Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. Whisk flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
  3. Beat eggs, sugar, oil, and pumpkin puree until smooth. Gradually mix in dry ingredients.
  4. Spread batter into the prepared pan. Bake for 25-30 minutes until a toothpick comes out clean.
  5. Cool completely before frosting.
  6. Beat cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar and mix until creamy.
  7. Spread frosting over cooled bars. Cut into squares and serve.
