- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup brown sugar (for streusel)
- 1/4 cup flour (for streusel)
- 2 tbsp butter, melted (for streusel)
Instructions
- Preheat oven to 375°F and line a muffin tin with liners.
- Mix flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
- In another bowl, whisk pumpkin puree, oil, eggs, and sugar.
- Combine wet and dry ingredients until just mixed.
- For the streusel, mix brown sugar, flour, and melted butter until crumbly.
- Fill muffin cups 2/3 full, then sprinkle streusel on top.
- Bake for 20-25 minutes or until a toothpick comes out clean.
Notes
- Use fresh pumpkin puree for best results.
- Don’t overmix the batter to keep muffins tender.
- Store in an airtight container for up to 3 days.
