Ingredients

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)
  • 2 tbsp butter, melted (for streusel)

Instructions

  1. Preheat oven to 375°F and line a muffin tin with liners.
  2. Mix flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
  3. In another bowl, whisk pumpkin puree, oil, eggs, and sugar.
  4. Combine wet and dry ingredients until just mixed.
  5. For the streusel, mix brown sugar, flour, and melted butter until crumbly.
  6. Fill muffin cups 2/3 full, then sprinkle streusel on top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
