Ingredients

  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F and grease a 15×10-inch jelly roll pan.
  2. Beat eggs and sugar until thick.
  3. Mix in pumpkin puree.
  4. Sift flour, baking soda, cinnamon, nutmeg, and salt, then fold into batter.
  5. Spread batter evenly into pan.
  6. Bake for 13-15 minutes until cake springs back.
  7. Turn cake onto a towel dusted with powdered sugar.
  8. Roll cake and towel together, then cool.
  9. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Unroll cake, spread filling, then reroll.
  11. Chill before slicing.
