A warm and comforting pumpkin spice baked oatmeal perfect for breakfast or brunch. Packed with seasonal flavors and easy to make.
Ingredients

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1 1/2 cups milk (dairy or plant-based)
- 1/4 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
- In a large bowl, mix oats, pumpkin puree, milk, maple syrup, egg, vanilla, pumpkin pie spice, cinnamon, and salt.
- Pour mixture into the prepared baking dish. Sprinkle pecans on top if using.
- Bake for 35-40 minutes until set and lightly golden.
- Let cool for 5 minutes before serving.
Notes
- Store leftovers in the fridge for up to 5 days.
- Reheat in the microwave for 30-60 seconds.
- Substitute walnuts for pecans if preferred.
