- 4 cups Rice Chex cereal
- 1/2 cup white chocolate chips
- 1/4 cup pumpkin puree
- 2 tbsp unsalted butter
- 1 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/2 cup powdered sugar
Instructions
- In a large bowl, measure out the Rice Chex cereal and set aside.
- In a microwave-safe bowl, melt the white chocolate chips, pumpkin puree, and butter in 30-second intervals, stirring until smooth.
- Stir in the pumpkin pie spice and cinnamon.
- Pour the mixture over the cereal and gently fold until evenly coated.
- Place the coated cereal in a large resealable bag and add the powdered sugar.
- Seal the bag and shake until fully coated.
- Spread on a parchment-lined tray to cool before serving.
Notes
- Store in an airtight container for up to 1 week.
- Adjust pumpkin spice to taste.
- For extra crunch, let it sit uncovered for 30 minutes after coating.
