Description

A moist and flavorful loaf combining tart rhubarb with warm chai spices, topped with a sweet vanilla glaze.


Ingredients

  • 1 1/2 cups chopped rhubarb
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp chai spice mix
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. Mix flour, baking powder, baking soda, salt, and chai spices in a bowl.
  3. Cream butter and sugar until light. Add eggs one at a time.
  4. Stir in vanilla and yogurt. Fold in dry ingredients.
  5. Gently mix in rhubarb. Pour into prepared pan.
  6. Bake for 50-55 minutes until a toothpick comes out clean.
  7. Cool for 10 minutes in pan, then transfer to a rack.
  8. Whisk powdered sugar, milk, and vanilla for glaze. Drizzle over cooled loaf.
