- 1 1/2 cups chopped rhubarb
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp chai spice mix
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup plain yogurt
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a loaf pan.
- Mix flour, baking powder, baking soda, salt, and chai spices in a bowl.
- Cream butter and sugar until light. Add eggs one at a time.
- Stir in vanilla and yogurt. Fold in dry ingredients.
- Gently mix in rhubarb. Pour into prepared pan.
- Bake for 50-55 minutes until a toothpick comes out clean.
- Cool for 10 minutes in pan, then transfer to a rack.
- Whisk powdered sugar, milk, and vanilla for glaze. Drizzle over cooled loaf.
Notes
- Use fresh rhubarb for best results.
- Adjust chai spice to taste.
- Store leftovers in an airtight container.
