Ingredients

- 2 cups chopped rhubarb
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 package pre-made pie crust
- 1 egg (for egg wash)
Instructions
- Preheat oven to 375°F (190°C).
- Mix rhubarb, sugar, cornstarch, and vanilla in a bowl.
- Roll out pie crust and cut into circles.
- Fill each circle with rhubarb mixture.
- Fold crust over filling and seal edges.
- Brush with egg wash.
- Bake for 20-25 minutes until golden brown.
Notes
- Can substitute sugar with honey for a different flavor.
- Best served warm with ice cream.
