Description

Delicious mini pies filled with sweet rhubarb, perfect for a quick dessert.


Ingredients

Scale
  • 2 cups chopped rhubarb
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 package pre-made pie crust
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix rhubarb, sugar, cornstarch, and vanilla in a bowl.
  3. Roll out pie crust and cut into circles.
  4. Fill each circle with rhubarb mixture.
  5. Fold crust over filling and seal edges.
  6. Brush with egg wash.
  7. Bake for 20-25 minutes until golden brown.
