Description

A moist and flavorful loaf combining tart rhubarb, sweet maple syrup, and crunchy walnuts, topped with a maple glaze.


Ingredients

  • 1 1/2 cups chopped rhubarb
  • 1/2 cup maple syrup
  • 1/2 cup chopped walnuts
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • For the glaze:
  • 1/4 cup maple syrup
  • 1/2 cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk milk, oil, egg, and vanilla. Add to dry ingredients.
  4. Fold in rhubarb, maple syrup, and walnuts.
  5. Pour batter into the pan. Bake for 50-55 minutes.
  6. Cool for 10 minutes. Mix glaze ingredients and drizzle over the loaf.

Notes

  • Use fresh rhubarb for best texture.
  • Adjust sweetness by reducing maple syrup if preferred.
