- 1 1/2 cups chopped rhubarb
- 1/2 cup maple syrup
- 1/2 cup chopped walnuts
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- For the glaze:
- 1/4 cup maple syrup
- 1/2 cup powdered sugar
- 1 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, brown sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, oil, egg, and vanilla. Add to dry ingredients.
- Fold in rhubarb, maple syrup, and walnuts.
- Pour batter into the pan. Bake for 50-55 minutes.
- Cool for 10 minutes. Mix glaze ingredients and drizzle over the loaf.
Notes
- Use fresh rhubarb for best texture.
- Adjust sweetness by reducing maple syrup if preferred.
- Store in an airtight container for up to 3 days.
