Description

This tangy-sweet rhubarb sauce is made with just two ingredients and ready in minutes. Perfect as a topping for desserts, breakfasts, or even savory dishes!


Ingredients

  • 1 lb rhubarb (fresh, chopped)
  • 2/3 cup sugar (adjust to taste)

Instructions

  1. Place the chopped rhubarb in a medium saucepan (choose a larger pot than you think you’ll need).
  2. Put the pot on low heat, add the sugar, and stir frequently.
  3. Cook for a few minutes until the rhubarb breaks down into a sauce and the sugar dissolves.
  4. Allow the sauce to cool slightly, then blend until smooth using an immersion blender or countertop blender.
  5. Use immediately or refrigerate for up to 3 days. Can also be frozen for longer storage.

Notes

You may add a squeeze of lemon or orange juice at the start of cooking to add brightness. Sweetness can be adjusted to taste. The sauce thickens as it cools.
