Ingredients

- 500g rhubarb, chopped
- 200g sugar
- 250ml water
- 1 tbsp lemon juice
Instructions
- Combine rhubarb, sugar, and water in a saucepan.
- Simmer over medium heat until rhubarb softens, about 10 minutes.
- Remove from heat and blend until smooth.
- Stir in lemon juice, then cool completely.
- Churn in an ice cream maker according to manufacturer’s instructions.
- Freeze for at least 4 hours before serving.
Notes
- Use ripe rhubarb for best flavor.
- Adjust sugar based on tartness preference.
- Store in an airtight container in the freezer.
