Description
A simple roasted butternut squash dish topped with sweet maple-glazed pecans.

- 1 medium butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup pecans
- 2 tbsp maple syrup
- 1 tbsp butter
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 400°F.
- Toss squash cubes with olive oil, salt, and pepper.
- Spread squash on a baking sheet and roast for 25 minutes.
- While squash roasts, toast pecans in a pan over medium heat.
- Add maple syrup, butter, and cinnamon to pecans.
- Stir pecans until coated and caramelized.
- Remove squash from oven and top with maple pecans.

- Peel squash carefully with a sharp knife.
- Check pecans often to prevent burning.
