Description

A simple roasted butternut squash dish topped with sweet maple-glazed pecans.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pecans
  • 2 tbsp maple syrup
  • 1 tbsp butter
  • 1/4 tsp cinnamon

Instructions

  1. Preheat oven to 400°F.
  2. Toss squash cubes with olive oil, salt, and pepper.
  3. Spread squash on a baking sheet and roast for 25 minutes.
  4. While squash roasts, toast pecans in a pan over medium heat.
  5. Add maple syrup, butter, and cinnamon to pecans.
  6. Stir pecans until coated and caramelized.
