Ingredients

Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots and parsnips with olive oil, salt, pepper, and thyme.
- Spread evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and golden.
