- 1 lb carrots, peeled and sliced
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp butter, melted
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground cinnamon
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes, stirring halfway.
- Mix maple syrup, melted butter, and cinnamon in a small bowl.
- Pour glaze over carrots and roast for 5 more minutes.
- Serve warm.

- Cut carrots evenly for uniform cooking.
- Adjust sweetness by adding more or less maple syrup.
- Garnish with fresh parsley if desired.
