Description

A simple and flavorful roasted pumpkin dish with garlic and herbs, perfect as a side or main course.


Ingredients

  • 1 medium pumpkin (about 2 kg), peeled and cubed
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, toss pumpkin cubes with garlic, olive oil, thyme, rosemary, salt, and pepper.
  3. Spread evenly on a baking sheet.
  4. Roast for 30-35 minutes until tender and slightly caramelized.
  5. Serve warm.
