- 2 cups plain Greek yogurt
- 2 eggs
- 2 tbsp butter
- 1 tsp paprika
- 1 tsp red pepper flakes
- 1 clove garlic, minced
- Salt to taste
- Fresh mint or parsley for garnish
Instructions
- In a bowl, mix yogurt with minced garlic and a pinch of salt. Set aside.
- Poach the eggs in simmering water for 3-4 minutes until whites are set but yolks are runny.
- Melt butter in a small pan over medium heat. Add paprika and red pepper flakes, stirring for 30 seconds until fragrant.
- Divide yogurt between two bowls. Top with poached eggs.
- Drizzle spiced butter over the eggs and yogurt.
- Garnish with fresh mint or parsley.
