Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/4 cup white wine (optional)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  4. Add shrimp, salt, and black pepper. Cook for 2-3 minutes per side until pink.
  5. Pour in white wine (if using) and simmer for 1 minute.
  6. Add zucchini noodles and toss for 1-2 minutes until slightly softened.
  7. Stir in lemon juice and parsley.
  8. Serve immediately, topped with Parmesan cheese if desired.

Notes

  • Use fresh shrimp for the best flavor and texture.
  • For a dairy-free option, skip the butter and Parmesan.
  • Zucchini noodles cook quickly, so avoid overcooking.
