Ingredients

  • 8 small corn tortillas
  • 1 cup diced mango
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced
  • 1 tbsp lime juice

Instructions

  1. Heat olive oil in a pan over medium heat.

  3. Cook shrimp for 2-3 minutes per side until pink and opaque.
  4. Combine mango, red onion, cilantro, jalapeño, and lime juice to make salsa.
