- 4 boneless, skinless chicken breasts (about 1 pound)
- 2 ripe peaches (sliced)
- 1/2 cup basil pesto (homemade or store-bought)
- 2 tbsp olive oil (extra virgin)
- 1/4 cup chicken broth
- salt and pepper (to taste)
- 1 tbsp lemon juice (freshly squeezed)
- 1 clove garlic (minced)
Instructions
- Pat the chicken dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4–5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, reduce heat to medium and sauté minced garlic for 30 seconds.
- Pour in chicken broth and scrape any browned bits from the bottom.
- Add sliced peaches and cook for 2–3 minutes until slightly softened.
- Return chicken to the pan, spoon pesto over each breast, cover, and simmer for 5–7 minutes on low heat until chicken is cooked through.
- Finish with a drizzle of lemon juice before serving.
Notes
Use ripe, seasonal peaches for best results. This dish pairs wonderfully with a side of couscous or grilled bread.
