A flavorful and vibrant summer dish made with juicy peaches, basil pesto, and golden-seared chicken breasts—all cooked in one skillet for easy cleanup and maximum taste.

  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 2 ripe peaches (sliced)
  • 1/2 cup basil pesto (homemade or store-bought)
  • 2 tbsp olive oil (extra virgin)
  • 1/4 cup chicken broth
  • salt and pepper (to taste)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 clove garlic (minced)

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, reduce heat to medium and sauté minced garlic for 30 seconds.
  4. Pour in chicken broth and scrape any browned bits from the bottom.
  5. Add sliced peaches and cook for 2–3 minutes until slightly softened.
  6. Return chicken to the pan, spoon pesto over each breast, cover, and simmer for 5–7 minutes on low heat until chicken is cooked through.
  7. Finish with a drizzle of lemon juice before serving.

Notes

Use ripe, seasonal peaches for best results. This dish pairs wonderfully with a side of couscous or grilled bread.
