Delicious pumpkin chocolate chip cookies that are soft, chewy, and packed with warm spices.

- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 large egg
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp milk
- 1 tbsp vanilla extract
- 2 cups semisweet chocolate chips
Instructions
- Preheat oven to 375°F (190°C).
- Mix pumpkin, sugar, oil, and egg in a large bowl.
- Dissolve baking soda in milk and add to the mixture.
- Stir in flour, baking powder, cinnamon, salt, and vanilla.
- Fold in chocolate chips.
- Drop by tablespoonfuls onto a greased baking sheet.
- Bake for 10-12 minutes.
- Let cool before serving.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Store in an airtight container for up to 5 days.
- Dough may be sticky—lightly wet hands for easier shaping.
