A healthy and delicious dinner option featuring roasted spaghetti squash topped with homemade marinara sauce.
Ingredients

- 1 medium spaghetti squash
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups marinara sauce
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh basil
Instructions
- Preheat oven to 400°F (200°C).
- Cut spaghetti squash in half lengthwise and scoop out seeds.
- Drizzle with olive oil and season with salt and pepper.
- Place squash cut-side down on baking sheet and roast for 40 minutes.
- Remove from oven and use fork to scrape squash into strands.
- Top with warm marinara sauce, Parmesan, and fresh basil.
Notes
- Store leftovers in airtight container for up to 3 days.
- Add cooked ground turkey for extra protein.
- Try different herbs like oregano or thyme.
