Ingredients

  • 1 medium spaghetti squash
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups marinara sauce
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh basil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Place squash cut-side down on baking sheet and roast for 40 minutes.
  5. Remove from oven and use fork to scrape squash into strands.
