Description

This sweet and tangy stewed rhubarb is quick to make with just 3 ingredients. Ready in 15 minutes and perfect over yogurt, pancakes, or ice cream!


Ingredients

Scale
  • 4 cups rhubarb (chopped (about 68 stalks))
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup water

Instructions

  1. Wash and dice the rhubarb into 1/2-inch chunks.
  2. Add rhubarb, sugar, and water to a medium saucepan.
  3. Bring to a simmer over medium heat, stirring occasionally.
  4. Cook for 10–15 minutes, until rhubarb softens and breaks down into a thick, jam-like consistency.
  5. Remove from heat and let cool before serving. Store in an airtight container in the fridge.

Notes

Optional add-ins: vanilla extract, citrus zest, or cinnamon. Serve over yogurt, oatmeal, ice cream, or baked goods.
