A hearty and flavorful strata made with sausage, greens, and bread, perfect for breakfast or brunch.
Ingredients

- 8 oz sausage, crumbled
- 1 cup chopped greens (spinach, kale, or Swiss chard)
- 4 cups cubed bread (day-old works best)
- 4 large eggs
- 1 1/2 cups milk
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Cook sausage in a skillet until browned. Remove and drain excess fat.
- Add greens to the skillet and sauté until wilted.
- Layer bread cubes, cooked sausage, and greens in the baking dish.
- Whisk eggs, milk, salt, pepper, and thyme. Pour over the bread mixture.
- Sprinkle cheese on top. Let sit for 10 minutes to soak.
- Bake for 35-40 minutes or until set and golden brown.
- Let cool slightly before serving.
Notes
- Use day-old bread for better texture.
- Substitute any greens you prefer.
- Can be prepped the night before and baked in the morning.
