Description

A fresh, vibrant salad made with sweet strawberries, tender spinach, crunchy nuts, and tangy cheese—perfect for spring and summer meals.

  • 6 cups fresh spinach (washed and dried)
  • 1 pint fresh strawberries (hulled and sliced)
  • 1/2 cup crumbled feta or goat cheese
  • 1/3 cup sliced almonds or chopped walnuts (toasted, optional)
  • 1/4 small red onion (thinly sliced, optional)
  • 1/3 cup balsamic vinaigrette or poppy seed dressing

Instructions

  1. Rinse and dry the spinach. Hull and slice strawberries. Toast nuts in a skillet over medium heat for 3–5 minutes if desired.
  2. In a large bowl, combine spinach, strawberries, nuts, and red onion (if using).
  3. Top with crumbled feta or goat cheese. Drizzle with vinaigrette just before serving. Toss gently to combine.
  4. Serve immediately, chilled or at room temperature.

Notes

For added protein, top with grilled chicken or chickpeas. Swap in pecans or sunflower seeds for variation.
