Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix mashed sweet potato, almond butter, honey, and vanilla extract.
- Add rolled oats, cinnamon, and salt. Stir well.
- Fold in walnuts and raisins.
- Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
- Bake for 15-18 minutes or until edges turn golden.
- Let cool before serving.
