- 2 cups mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup butter, melted
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract

- 1/4 tsp ground ginger
- 1 unbaked pie crust
Instructions
- Preheat oven to 350°F (175°C).
- Mix mashed sweet potatoes, sugar, and melted butter in a large bowl.
- Add eggs, milk, vanilla, and spices. Stir until smooth.
- Pour filling into the unbaked pie crust.
- Bake for 50-60 minutes or until set.
- Let cool before serving.
Notes
- Use freshly boiled and mashed sweet potatoes for the best texture.
- Adjust sugar to taste if sweet potatoes are very sweet.
- Check pie at 50 minutes—center should be slightly firm.
