Ingredients

- 8 oz tempeh, cubed
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tbsp sesame oil
- 1 cup cooked rice
- 1 cup steamed broccoli
- 1/2 cup shredded carrots
- 1 tbsp sesame seeds
Instructions
- In a bowl, mix soy sauce, maple syrup, rice vinegar, ginger, and garlic to make the teriyaki sauce.
- Heat sesame oil in a pan and sauté tempeh until golden brown.
- Pour the teriyaki sauce over the tempeh and simmer until thickened.
- Assemble the bowl by placing rice at the bottom, followed by tempeh, broccoli, and carrots.
- Sprinkle sesame seeds on top and serve.
Notes
- Use tamari for a gluten-free option.
- Add sriracha for a spicy kick.
- Store leftovers in an airtight container for up to 3 days.
